Crepes


Three eggs
one cup flour
one cup milk
a pinch of salt
and a dash of vanilla
 

Place all ingredients in a mixing bowl
nothing too big, and easy to pour from
always eggs first
mix till smooth and creamy
 

Chill for about an hour
 

Heat a flat thick pan nice and hot
keep it well buttered
 

Pour about a half cup of batter into the pan
roll the pan till it has a nice thin coat
 

Cook till golden brown on the bottom
 

Eat well.
 


Bread


Proof the yeast.
heat 1/4 cup of water to 105 deg F.
pour 2 packets of yeast on top...
wait till is softens (2-3 min.), then mix in.
 


Scald 1 cup of milk.
bring to a boil, almost.
it should start to form a skin on top.
 


Once the milk is scalded...
mix in 1 stick butter, 4 tbl sugar, 1 tbl salt.
add 1/2 - 1 cup of mashed potatoes (instant spuds).
beat 2 - 3 eggs and pour in along with the yeast.
note: do not add milk or eggs while the milk is hot!
 


Pour the mixture in a large mixing bowl.
start with 2 cup of flour, about 3 hand fulls.
turn on mixer to a slow speed. slowly add flour.
after 3 - 4 min the dough will get thick and gummy.
as it starts to clime up the beaters switch to hooks.
with the hooks add slowly another 4 cups of flour.
in total you will need about 6 - 7 cups of flour.
when the dough is mininally sticky, it is time to kneed.
 


Dust a counter top with flour.
place the dough on the counter with a bowl over it.
let the dough rest a few minutes.
 


Need the dough a few minutes till it is elastic.
add flour if necessary.
 


Coat the bowl with oil.
roll the dough in the bowl to coat with oil as well.
place in oven with a pan of hot water.
let sit till the volume doubles, about 45 min.
 


Kneed out the air bubbles.
cut dought in half.
cut one half into 2/3 and 1/3.
cut each of the pieces into thirds.
roll the thirds into long strips.
braid the three strips.
stack the 3 braids on top of each other.
 


Coat the dough with oil again.
this will keep it from getting dry.
put it back in the over with hot water.
let the volume double again.
 


Bush the surface with egg yoke.
bake in the oven at 350 deg till golden brown.
 
 

Eat hot.
